This
recipe is Maria Boman's (Feb. 5, 1900 to Oct. 31, 1968) ginger snap cookie. I
received it from Jan-Erik Solvin who received it from Boman. Actually, the recipe
is Swedish and is called Prince Carl's ginger snap cookie. Anyhow, this is merely
something to attempt. What is not known, is to what degree devotion to skill influenced
the outstanding product.
4½ sticks of butter 4 cups
sugar 2 eggs 4 tablespoons molasses 2 teaspoons cinnamon |
2 teaspoons clove 2 teaspoons ginger 2 teaspoons cardamom 1 teaspoon
soda 8 cups flour |
Mix butter and sugar until light and puffy.
Add the eggs, remaining spices, and
7 cups of flour. Reserve 1 cup of flour to adjust the dough and for rolling.
Store in refrigerator to the next day.
Roll the dough thin.
Bake in the oven for 7–9 minutes at 350°.
